What do you get when you cross sour cream and onion potato chips with classic mashed potatoes? A festive side dish to compliment your favourite main course! Velvety smooth with tangy dill, these taters are a great companion to any holiday feast.
- In a bowl, combine sour cream with seasoning. Set aside.
- Cut unpeeled potatoes into small cubes. Please in Multipurpose or Round Steamer. Cover and microwave on high 12 min, or until fork tender.
- Mash potatoes to desired consistency. Fold in sour cream mixture, milk, and butter. Taste and season with salt and pepper, if desired.
Mashed potatoes freeze well. They’re a great timesaver when you’re prepping ahead for entertaining. After preparing mashed potatoes, let them cool completely. Scoop them into an air-tight container or resealable plastic bag. Freeze for up to 1 month. Defrost in the refrigerator overnight, then reheat in a Steamer. Mash again with a splash of milk, as needed.
Flake in some canned salmon and crack an egg into leftover mashed potatoes to make quick and easy fish cakes. Try them out in your air fryer!
